Ingredients:

  • 1/4 cup fresh parsley or coriander, chopped
  • 1 egg (or 2 egg whites for lower fat)
  • 1/4 cup whole wheat breadcrumbs or oats
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard (Dijon or yellow)
  • 1/2 teaspoon smoked paprika or black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon olive oil or avocado oil (for cooking)
  • Whole wheat or multi-grain burger buns
  • Lettuce, tomato, onion slices, pickles for topping

Instructions:

  1. Make the Patty Mix:
    In a large bowl, combine lean ground beef, onion, garlic, grated carrot, bell pepper, parsley, egg, breadcrumbs, Worcestershire sauce, mustard, smoked paprika, salt, and pepper. Mix gently until combined but don’t overwork to keep patties tender.
  2. Form Patties:
    Divide into 4-6 even portions and shape each into a round patty about 1/2 inch thick.
  3. Cook the Patties:
    Heat olive oil in a non-stick pan or grill over medium-high heat. Cook patties about 4-5 minutes each side or until internal temperature reaches 71°C (160°F). Avoid pressing the patties down to keep them juicy.
  4. Prepare the Buns:
    Toast whole wheat buns lightly on the grill or pan for added texture.
  5. Assemble the Burger:
    Place the patty on the bun base, top with fresh lettuce, tomato slices, onion, and pickles. Add your favorite sauce (mustard, light mayo, or avocado) sparingly.
